Paleo Pancakes

These fluffy paleo pancakes have been a favorite in our home for years. My kids and I have made them more times than I can count, and it’s become one of those recipes that bring us together and one that is requested often. The original recipe comes from PaleOMG and I got permission to share years ago so I’m sharing again.

They’re made with wholesome ingredients like coconut flour, tapioca flour, and eggs but taste just as fluffy, rich, and satisfying as the pancakes I grew up with.

We love to press fresh berries or chocolate chips into the batter before flipping for some added sweetness and color. Golden on the outside, fluffy in the middle, and easy to make, this is the kind of recipe that feels both nourishing and nostalgic.

Make these paleo pancakes and I bet you will fall in love. Try them once, and you might find yourself wondering why you ever needed wheat pancakes in the first place.

Prep time: 10 minutes

Cook time: 12-18 minutes

Yield: 5 four-inch pancakes

Ingredients

3 eggs, beaten

3/4 cup coconut milk

1 tablespoon honey

1 teaspoon vanilla extract

½ cup coconut flour

½ cup tapioca flour

½ teaspoon baking powder

½ teaspoon baking soda

pinch of sea salt

coconut oil, for greasing pan

maple syrup, Grade B, for topping

Supplies

cooktop

large frying pan

pancake utensil

large mixing bowl

whisk or fork

soup ladle

Instructions

  1. Whisk together eggs, coconut milk, honey, and vanilla extract in a large bowl. 

  2. Then add coconut flour, tapioca flour, baking powder, baking soda, and sea salt. Whisk until batter is well combined. 

  3. Grease the frying pan heavily and place over medium heat. Once the oil is hot, use a large ladle to pour a 4-inch pancake on the pan. I fry two pancakes at once and always make sure the oil is hot enough otherwise the pancakes may stick.

  4. Once pancake has cooked and bubbles begin to surface on the top of the pancake, flip it. 

  5. The pancake will need to cook for 2-3 minutes each side. 

  6. Repeat with the rest of the pancake mixture.
