Raw Lime Mousse
This healthy lime mousse has been part of my kitchen for over a decade—I’ve been making it since my kids were babies. It’s a light and creamy dessert that feels indulgent but is made with simple, wholesome ingredients. The lime flavor makes it the perfect refreshing treat for spring and summer, and it’s so easy to whip up that it quickly became a family favorite.
Over the years, this easy lime mousse recipe has turned into a little tradition in our home. My eldest still asks me to make it, especially when the weather is warm and we want something cool, tangy, and satisfying without being too heavy. It’s the kind of healthy dessert that never goes out of style.
Recently, my mom asked me to share the recipe with her, and that was the reminder I needed to post it here and pass it along to you. Yield: 5 servings
Ingredients
Lime Mousse:
4 avocados
1/2 cup honey
1/4 cup lime juice
Crumble:
1 cup shredded coconut
1 1/4 cups almonds {raw, soaked, and then dehydrated is the best}
1/4 teaspoon sea salt
3 small pinches of cayenne pepper
Supplies
food processor with S blade
spatula
5 glass serving bowls or 1 8x8 glass dish
Instructions
Combine the nuts and coconut in the food processor. Process until you get a fine mixture.
Add the sea salt and cayenne to the nut/coconut mixture. Blend until everything is mixed well.
While the food processor is on, add the dates one-by-one and process until the mixture resembles graham cracker crust. It should be loose and crumbly but sticky.
Divide the crumble into the serving bowls then press lightly to form a crust. You can set aside a little crumble to save for the top if you like.
Put your food processor back together and blend all the ingredients for the lime mousse. Blend until it is thick and creamy with no lumps, about 1-2 minutes. Scrape down sides when needed.
Add the lime mousse on top of the crumble layer.
Serve topped with a sprinkle of crumble and fresh berries or kiwi.
